Mexican food is the bomb. Full stop. Every time I eat good Mexican I am fulfilled. If you love Mexican, you’ll love this recipe. It uses the the undercut of the chuck beef; A cut that Darryn calls the “deluxe chuck”. So what’s so deluxe about this chuck? Well firstly, it’s the perfect slow cooking cut of meat as it’s got the perfect texture for shredded beef. After slow cooking for several hours, you can scrape a fork across it, and it will break apart like a treat. As soon as I heard this, the words shredded beef chilli con carne filled my brain, due to my love affair with good Mexican food. Click here for the recipe.
